We made a couple of tweaks, and are going to continue perfecting this recipe. The recipe for lox was adapted from My Darling Vegan’s blog (linked below). Useful tips for Cashew Cream Cheese (+vegan lox)!

She makes me some pretty awesome food, but this was somethin’ else! I’m not sure how I can communicate how good this “lox” tastes. So many pictures I even shared on my own Instagram. We prepped some bagels, and took some pics. She did some research, tested some recipes, and wow! She’s pregnant and has not been able to eat raw fish in 7 months. (Although very kind, this was not a selfless act. She wanted to make sure it had a true deli taste. So a bagel with cream cheese just wasn’t enough. She just made authentic deli-style scallion cream cheese… out of cashews!īut my wife likes to out-do herself. Definitely not drag-me-out-of-bed-early-on-a-weekend-exciting.īut this?! This is different. My silly wife drags me to bagel shops all of the time and I always end up with a pathetic swipe of hummus as a topping. Yes it’s lox made of carrots and marinade. “Guys! Guys! Bagels with cream cheese and lox are back in my life! I didn’t know how much I missed them.
#CREAM CHEESE CASHEW HOW TO#
The last time I made this cake and used this frosting (with the 2 cups of swerve), my husband raved over it – that is saying a lot without real sugar, or without real cream cheese! Even before I put the frosting in the fridge, a heavy tablespoon can stand up in the bowl! Sorry I tried all the ways I know how to include my pic.Me (Shalva) writing “as Lenny” about vegan lox bagel with cashew cream cheese Today, I went with 1 1/2 T of tapioca flour and 1 1/2 cups of swerve confectioners (I measure it into my sifter and sift it over the frosting bowl).

I have been successful with adding 2 T tapioca flour and 2 cups of swerve confectioners (or erythritol that I’ve put in my Vitamix).
#CREAM CHEESE CASHEW FREE#
I have a hankering for cake every once in a while, and I’m totally in love with the gluten free palate’s recipe for grain free hummingbird cake (uses fruit and a bit of maple syrup for sweetening) that I’ve used this frosting for (and I made that recipe into muffins without frosting).

I use palm shortening (both Nutiva and spectrum with and without coconut) and Kite Hill almond cream cheese. So I’ve successfully made this recipe twice. I can’t have cashew, but I can have almond I can have eggs, but not dairy, etc. I have a weird diet because of chronic health issues, so I’ve had to “mix and match” recipes on lots of sites.
